Delicious Keto Friendly Mayo Recipe
The taste of homemade keto mayo recipe takes me back to childhood. As much as I love those memories of deliciousness, this Keto Friendly Mayo is even better.
If you’ve tried making homemade mayo and failed in the past, today is the day you can master it! This homemade keto mayo recipe is sooo easy it can be whipped up in minutes.
Remember, my mission is to keep thinks simple in the kitchen. If it wasn’t simple, I wouldn’t make it. I want to make you keto confident as you start on keto, not overwhelm you.
Everything will taste better if you use this homemade mayo recipe instead of the store bought brands with sugar and other ingredients your body doesn’t need.
Keto Mayo Ingredients
- 1 egg yolk
- 1 t Dijon mustard
- 1t fresh squeezed lemon juice
- 1 t very cold water
- 1/8 – 1/2 t salt depending on taste
- 3/4 cup avocado oil
You will need either an immersion blender or a small food processor. I found the consistence it thicker and it’s easier to control then when using a blender. (This is probably user error…)
- Put egg yolk, mustard, lemon juice, and cold water in your food processor.
- Turn on the food processor pouring olive oil through the top one is running.
- Start two tablespoons, pouring while the processor does it spin.
- Pour few tablespoons at a time. Again, pause the pouring and let the food processor run. Pour again.
The key it’s pouring slowly while the food processor or immersion blender is running.
Continue adding the avocado oil to the running food processor until the ingredients second to a classic meal texture.
Store and a small mason jar. This homemade keto mayo can be used in so many ways think dressings, dips, and sauces.
Homemade Keto Mayonnaise Tips
Some find this mayo recipe too thick, especially when it sits in the fridge for a day or two. If that’s the case, you may want to adjust the amount of avocado oil you add.
Cut down the avocado oil from 3/4 cup to 1/2 cup. it sound sever, but it still has the same smooth texture. I really like the results with 1/2 cup of oil. If you plan on storing it for the week, it will thicken a bit in the fridge. Experiment with this and you’ll find the perfect thickness for you liking.
This recipe makes a small batch. You may want to double or even triple the recipe depending on how much you use during the week. Personally I like it fresh, so I make small batches two times a week rather than doubling the recipe once a week.
Experiment A Little
If you have other oils you prefer give those a shot: olive oil, hazelnut oil, walnut oil… it depends on what you’ll be using it for. If you really like the traditional mayo, I say, stick to avocado oil.
Accuracy with Mayo Matters
Be sure to keep your measurements accurate. They matter. The tools you used to make this keto mayonnaise matters too. I tried making it in the blender and it came out way too thin. I used the same measurements I use when I use the immersion blender, but I never mastered using the blender for this keto mayo recipe or any mayo recipe for that matter.
