Easy Keto Egg Roll in a Bowl [15 Minute Keto Meal]
Okay if you’re looking for an easy meal that is delicious you MUST try this one. It was inspired by my daughter. She and her fiance have recently got started on keto.
She called me and raved about her simple dinner. I was really not that excited because I eat cabbage everyday. It turns out I was impressed!
Maybe I was skeptical about how great it was because I’ve found ways to use cabbage every day before keto was the rage. I thought this was just another basic keto recipe.
I was wrong!
By the way… do you know cabbage has a boatload of health benefits?
It’s true. It helps you digestion, your hormones, and help you master your metabolism. But, that’s for another post.
Egg Role in a Bowl is Flexible
Today I wanted to share this AMAZING egg roll in a bowl recipe. You’ve probably seem many versions on social media.
This is because once you get the basics for this recipe, you can tweak it to meet your tastes and your health needs.
The thing I love the most about this recipe is that it’s fast and delicious!
Egg Roll in a Bowl
Keto Egg Roll in a Bowl
time: 15 minutes
time: 10-15 minutes
1¼ lb. spicy bulk pork sausage
¼ c. water
3 c. green cabbage, shredded
1 medium carrot, shredded
½ t. garlic powder
2 T. toasted sesame oil
½ T. fresh ginger, finely minced
2 T. green onions, chopped
1 T. rice vinegar
2 T. coconut aminos (braggs aminos) or tamari
Sea salt and black pepper, to taste
1 T. toasted sesame seeds
Heat a large high-sided skillet over medium-high heat. Add sausage and
cook, breaking the meat into small pieces as it cooks, for
approximately 5-6 minutes. Once sausage is no longer pink, remove
from heat and carefully drain excess grease from pan.
Just remember: Wipe off any excess fat that drips down the side of the pan before
returning to burner.
Return skillet to heat. Add water and scrape up brown bits from the bottom
of the pan with a spatula. Reduce heat to medium and add shredded
cabbage, carrots, garlic powder, sesame oil, ginger, and green
onions. Season with salt and black pepper, to taste, and cook,
stirring frequently, until the cabbage wilts and the carrot softens,
approximately 4-5 minutes.
Add rice vinegar and coconut aminos and stir to combine. Cook another
1-2 minutes or until heated through. Remove from heat and transfer
to a serving platter or bowl. Sprinkle with toasted sesame seeds, if
using, and serve immediately. Enjoy!
Tips for the Best Egg Role in a Bowl
The real secret in this easy keto recipe is ginger… okay and the green onions. Green onions and ginger are definitely friends!
You can use powered ginger. It always works in a pinch. But, if you’re looking for a fresh, zesty taste, go for the fresh ginger.
You can’t beat its fresh taste and aroma of fresh ginger and green onions.
Ginger also has some great anti inflammatory properties that benefit you keto diet and weight loss efforts!
If you’re a cabbage lover like me, I always up the game on the amount of cabbage. I usually double it.
You might not want to go that extreme, but consider having a bit more shredded cabbage waiting just in case you want that extra crunch.
