Mozzarella Keto Chicken Thighs

These mozzarella keto chicken thighs are a quick meal with very little prep. Pre-keto I didn’t eat many meat sources of protein. The one I made most because of its versatility was chicken breast.

Nowadays, I go for chicken thighs every single time. These keto friendly mozzarella chicken thighs fit right into my keto goals. I want fat and moderate protein. You can get that with this recipe. It partners well with a side of broccoli or asparagus or our Southern Keto Green Beans Recipe.

Chicken Thighs or Chicken Breast?

My sister asked me if I tried making my mozzarella keto chicken thighs with chicken breasts instead in order to save on calories. Reflexively I responded with, “Why would I do that?”… our conversation went on as I explained to her my rationale.

I didn’t mean to be a smarty-pants. Nor do I ever want to come off condescending when it comes to people asking me questions about how and what I eat. After all, you have to lead with education, right?

Mozzerella Keto Chicken Thighs Recipe

Keto Friendly Mozzarella Chicken

There is nothing complex about this keto recipe. You’ll have 6 servings of tasty keto chicken thighs in 40 minutes!

Prep time: 10 minutes Cook time: 25-30 minutes Serves: 6

Ingredients:

  • 3 T. extra virgin olive oil
  • divided 2 lbs. boneless, skinless chicken thighs
  • 1½ T. Italian seasoning, divided
  • Sea salt and black pepper, to taste
  • 3 T. unsalted butter
  • c. Chicken broth, preferably organic
  • ½ c. multi-colored cherry tomatoes, quartered*
  • 8 oz. fresh Mozzarella cheese, sliced
  • ½ t. red pepper flakes
  • Optional garnish: Sprigs fresh basil


For a colorful twist you can use multi-color tomatoes. You can use your favorite tomatoes of course.

Directions for Keto Chicken Thighs

  1. Preheat oven to 425°F.
  2. Heat 1 tablespoon olive oil in a large, oven-safe skillet over medium heat.
  3. Rub the chicken thighs with the remaining olive oil and sprinkle both sides with one tablespoon Italian !seasoning.
  4. Season with salt and black pepper, to taste, and transfer to the hot skillet.
  5. Cook for 4-5 minutes per side, or until the chicken develops a golden crust.
  6. Remove from heat and add butter, chicken broth, and cherry tomatoes.
  7. Top each chicken thigh with a slice of fresh Mozzarella cheese and sprinkle with crushed red pepper flakes and remaining Italian seasoning.
  8. Season with additional salt and black pepper, if desired.
  9. Transfer skillet into preheated oven and roast for 15-20 minutes, or until chicken is cooked through and the Mozzarella is melted.
  10. Remove from oven and allow chicken to rest for 5 minutes.

Dress the meal up with some pan sauce and fresh basil sprigs. This taste great fresh, but left overs heat up rather nicely. Try serving it with our Cheesy Keto Cauliflower and you’ll have a complete keto meal!
