Today is the day I made my favorite vegetables so far on my keto journey.
If you like green beans and bacon, you’re going to love this recipe.
My inspiration came from a local restaurant, the Texas Roadhouse. When we eat there I usually get grilled salmon on a bed of greens. Although they have many unfriendly keto side dish options, like loaded baked potatoes, and a fried blooming onion- like “Cactus Blossom” with 1450 Calories – not including the dipping sauce – there’s always something to eat for the keto enthusiast at the good old Roadhouse.
These keto friendly green beans mimic the double-side order I always get when we eat there. The effort to taste ratio puts this on my Top 10 Easy Keto Recipes.
Country Keto Green Beans Ingredients
- 4 cups frozen organic green beans
- Six slices of bacon cut into chunks size to taste
- Half Red onion chopped
- 2 cups of water
- Half teaspoon pepper
- 1 tablespoon Xylitol or Eyrithrotol
- Two drops liquid Stevia
Heat the frozen green beans in a pot of water. I personally like them crunchy not limp.
Mix sweeteners and pepper into the 2 cups water. Whisk to melt the keto friendly sweeteners. Set that aside.
Cook up the chopped bacon in a pan. When the bacon is done cooking add the chopped onions. Continue cooking until onions are translucent.
Drain the green beans and add them to cooked bacon and onions. Pour the 2 cups of water seasoned with sweeteners salt and pepper into the pan with the green beans, bacon, and onions. Allow the mixture to cook on low for another 2 to 5 minutes depending on preference of green bean texture. Simmering it for a few minutes allows the flavors of the bacon and the onions to blend with the green beans, and the results are worth it. Season with more salt and pepper to taste.
You can increase or decrease the amount of bacon to your liking. Although it’s not exactly the Texas Roadhouse version of the famous bacon green beans, it’s absolutely delicious.
